We’re still pregnant! I’m going to talk about that a little bit tomorrow, but today I wanted to get this fun post up. I love being off of work, just enjoying the time with this big old bump. Today we blogged, worked out, made the guacamole recipe below, blogged more, + now we’re heading to a prenatal massage! I was holding out on getting a prenatal massage because I figured the baby would be on the outside soon, but I’m really looking forward to some relaxation + pampering.
Who is excited for the Bachelorette premiere tonight? I developed a serious girl crush on JoJo last season. Her personality, looks, style…everything. I’m excited to see her sort through these men + wouldn’t it be the BIGGEST bonus if we get to see Aaron Rodgers + Olivia Munn on a hometown date?! If you missed the news Aaron’s younger brother Jordan is one of the suitors. The Bachelorette is one of my guilty pleasures (Drew cannot stand it…haha). I think I’ll win the TV control war tonight though since I have this fully developed human in me. 😉
One of my favorite things is getting together with fellow Bachelor/Bachelorette loving girlfriends for a viewing party or watching it at home + spending the whole time texting with my friend Marissa.

You’ll be the hit of the party, people love them some fresh guacamole and/or salsa, especially this time of year. My friends always request I bring this salsa (aka Texas Cavier), my friend Beth shared it with me years ago.
My friend Martha just started a blog called Staying Martha! I love supporting new bloggers + I’ve been on the lookout for a new guacamole recipe. The title of her blog is perfect as she really wants to focus on staying herself through all of the new changes life brings (she just welcomed the cutest little boy Dane in March!). Since I’m just over here waiting to birth a child of my own, I figured I would keep myself busy by making her recipe. It is SO good you guys. I had to use all my self control to save it to enjoy later during the Bachelorette.
Staying Martha’s Guacamole
- 3 ripe avocados
- 2 roma tomatoes
- 1 small yellow onion
- 1 jalapeno
- A handful of cilantro
- 1 tbsp garlic (approximately)
- Juice of one lime (or to taste)
- Salt + pepper to taste
- Dice onion, tomato, garlic, jalapeno and cilantro.
- Mash avocados into a large mixing bowl + then combine diced ingredients.
- Add salt, pepper and lime juice and stir until your preferred consistency.
Martha’s tips: I like to leave a couple of chunks, for optimal dipping. If you’re not into spice – you can remove the seeds and ribs of the jalapeno or just use half (I went with 1/2 because Drew doesn’t like spicy). I love a little kick so we keep it all in there, and sometimes even add a dash or two of Tabasco to really heat things up. I also go heavy on the lime and salt – I find that it really brings out the best in the other ingredients, and it’s freaking delicious. Grab some chips and fresh veggies and enjoy, you won’t regret it!
- Green pepper
- Yellow pepper
- Red pepper
- Orange pepper
- Red onion
- 1 can whole white corn
- 1 can black beans
- Apple cider vinegar (1/2 cup)
- Sugar (1/2 cup– could do it without the sugar to make it healthier)
- 1/8 cup olive oil
- Wash and chop green/yellow/red/orange peppers
- Chop red onion
- Drain whole white corn
- Drain and rinse black beans
- Combine all
- Heat 1/2 cup apple cider vinegar and 1/2 cup of sugar in a small saucepan until it boils then pull it off the heat.
- Let mixture cool and then combine 1/8 cup of olive oil
- Combine all ingredients!
I just made the first batch of the season for our neighborhood gathering. I typically double the recipe, so we can keep some at home! Tortilla chips are kind of my kryptonite, so I try not to have them in the house too often 😉
