Ingredients: green pepper, yellow pepper, red pepper, orange pepper, red onion, 1 can whole white corn, 1 can black beans, apple cider vinegar (1/2 cup), sugar (1/2 cup– could do it without the sugar to make it healthier), 1/8 cup olive oil.
- Wash and chop green/yellow/red/orange peppers
- Chop red onion
- Drain whole white corn
- Drain and rinse black beans
- Combine all
- Heat 1/2 cup apple cider vinegar and 1/2 cup of sugar in a small saucepan until it boils then pull it off the heat.
- Let mixture cool and then combine 1/8 cup of olive oil
- Combine all ingredients!
